Bountiful baskets has become a big part of our life over the last month. It's a food co-op that enables us to get fresher in-season produce at a very good price. It's really convenient too. I pick up my fruits and veggies every Saturday morning just down the street from my house at 7 am.
We have been forced to eat way more vegetables than we normally do and I feel so much better for doing it. The down side is that if you fall behind on your veggie consumption you have to have catch up meals like the one we had last week that consisted of 5 ears of corn for just Tyler and I and some radishes. We should have had the head of cauliflower for that meal too but we had reached our limit and just couldn't handle anymore. I'm trying to make sure I have a couple of servings at lunch and dinner now to avoid that scenario.
I like being able to go onto pinterest and find recipes for the food items that I have. I have corn and squash coming out of my ears right now and since I get bored easily with food I'm trying to find new ways to eat these foods without going crazy from the monotony. They really do provide a nice variety of pre-selected vegetables though so it's not as bad as I'm making it sound. Its just a lot on the weeks the boys are gone. A good problem to deal with I think.:)
Last night we had this strawberry salad using our butter lettuce, I steamed 1/2 of a head of broccoli, 1/4 of a head of cauliflower and cut up one yellow squash and seasoned them with Kosher salt. Next I made spiral noodles with tomato garlic sauce and then used this wonderful recipe for Tilapia. It was a really good light meal. We both had two servings and I didn't even really feel full.
